Ghevar Recipe || Tips for Perfect Ghevar






INGREDIENTS:
2 CUPS REFINED FLOUR 
1/4th CUP CLARIFIED BUTTER/GHEE
6-7 ICECUBES
COLD WATER
1/4th CUP MILK
2 CUP SUGAR 

METHOD :

FOR GHEWAR-

* TAKE A MIXING BOWL. ADD SOME ICECUBES IN IT.
* ADD 1/4TH CUP GHEE. WHISK IT WITH HANDS/WHISK
* AFTER 5 MINUTES GHEE TURNS INTO CREAM. SEPERATE THE ICECUBES AND WHISK IT AGAIN FOR 5 MINUTES.
* THEN ADD 2 CUPS REFINED FLOUR/MAIDA.MIX IT WELL 
* ADD REFINED FLOUR IN SMALL PROPORTIONS
* NOW ADD 1/4TH CUP OF MILK.
* ADD COLD WATER IN IT.
* CHECK ITS CONSISTENCY. IT SHOULD BE POURING CONSISTENCY.
* FINALLY ADD 1 TSPN LEMON JUICE. GHEWAR BATTER IS READY
* TAKE A PAN AND FILL THE HALF PAN WITH GHEE
(YOU CAN USE ANY COOKIE CUTTER OR SIEVE FOR THIS.)
* POUR BATTER IN SMALL PROPORTIONS. MAKE SPACE IN THE CENTER WITH ANY STICK/KNIFE.POUR BATTER FROM DISTANCE
* ADD BATTER 5-6 TIMES . POUR BATTER TO THE SIDES TO BIND GHEWAR.
* COOK IT ON HIGH FLAME FOR 8-10 MNS
* GHEWAR IS READY . TAKE IT OUT FROM ANY STICK/KNIFE.TAKE IT OUT ON A SLANTING WAY TO REMOVE EXCESS OIL.
* PLACE IT ON ANY SIEVE FIRST THEN PLATE.IN THE SAME WAY MAKE ALL THE GHEWARS.OUR 3 GHEWARS ARE READY WITH THIS AMOUNT OF MIXTURE.

FOR SUGAR SYRUP-
ADD 2 CUPS SUGAR AND 1 CUP WATER.
*COOK SUGAR SYRUP TILL IT BECOMES 2 SLANGS CONSISTENCY.
* SUGAR SYRUP IS READY

FOR RABDI-
* FOR RABDI, TAKE 1LTR FULL CREAM MILK.
* BOIL IT ON HIGH FLAME.
* WHEN MILK STARTS BOILING.STIR IT OCCASSIONALLY.
* STIR IT IN THE BOTTOM OF PAN.
* COLLECT ALL THE MALAI/CREAM ON THE SIDES OF PAN.
* COOK TILL IT IS 1/4th OF ITS QUANTITY
* NOW AFTER 8-10 MINUTES MILK GETS THICK .ADD 1TSPN ILAICHI POWDER AND 2 TBSP SUGAR.
* MIX IT WELL
* SCRAPE ALL THE MALAI FROM SIDES OF PAN.MIX IT WELL.

* NOW ADD SUGAR SYRUP OVER THE GHEWAR.
* ADD RABRI OVER THE GHEWAR .
* GARNISH IT WITH PISTA,KESAR & DRY FRUITS.
* MALAI GHEWAR IS READY
